Via Via travel cafe Brussels
From Juli till October 2010 I initiated the cuisine of the brand new Via Via travel cafe in Brussels. My mission was to create a menu with good comfort food in a traveling philosophy. I introduced a few brand new fusion-lunch-toasts who were highly appreciated together with world classics (Latino, Italian, Indian, Thai, Greek, Middle Eastern,...) and Belgian classics. After this start up I travelled to China, Laos and the south of India... Van juli tot oktober 2010 startte ik de keuken op van het Via Via travelcafé te Brussel (Steenkoolkaai 9). De opdracht was goedkope en lekkere maaltijden presenteren met een 'traveling philosophy'. Naast een aantal vernieuwende lunch-fusion-toasts vielen een aantal wereldgerechten (Latijns-Amerikaans, Italiaans, Indisch, Thai, Grieks, Midden-Oosters,...) en Belgische klassiekers erg in de smaak van de klanten. Na deze vier maanden trok ik zelf de wereld in, richting China, Laos en Zuid-India.
Kaaicafe
The Kaaicafe was our first big experiment (2009-2010). We were (and still are) very proud of the fact that all our commodities were organic. Our customers testify of delicious lunches and original and healthy snacks. When possible we chose for regional produce, which resulted in quite a sustainable whole. The menu reflected all this in a varied fast changing list of original lunches with plenty of vegetarian options. In the first two months our recipes were made by Lut De Clercq. In het Kaaicafé (2009-2010, Sainctelettesquare 18) waren al onze basisproducten van biologische oorsprong. Onze klanten getuigen van heerlijke lunches en lekkere en gezonde snacks. Indien mogelijk kwamen de groenten en fruit uit eigen regio, wat het geheel behoorlijk duurzaam maakte. Het menu vatte dit alles samen in een snel veranderende lijst van originele lunches met veel vegatarische opties. De eerste twee maanden werden onze recepten ontwikkeld door Lut De Clercq.
